Description

Pork jowl bacon is a cut of pork from a pig’s cheek that’s cured and smoked, giving it a similar appearance, texture, and flavor to bacon. It’s also known as hog jowl, joe bacon, or joe meat, especially in the Southern United States. Pork jowl has a higher ratio of meat to fat than traditional bacon, and its fat and salt create a crisp and spongy texture when cooked.
